    first peach wine

10 lbs of sugar in 3.5 gallons plus fruit seems like a lot of sugar. Are you sure the o.g. reading was correct? I have used 10 pounds of sugar in 5 gallon recipes and the of is well over 1.100.

    storing dewberrys

Yes, there are all kinds of bugs that get into and on the fruit. Spiders, worms, lady bugs. I picked blueberries a few years ago at a pick your own and there were worms in some of the blue berries.

    storing dewberrys

Go ahead and throw them in the freezer. It will kill both worms and natural yeast. You want to ferment with a wine yeast like Montrachet. My father in law attempts to ferment with wild yeast. It is a waste of time and fruit if you ask me.

    storing dewberrys

Are the dewberries already deep purple? Where I'm at, southeast houston, they are just barely starting turn colors. My patches have another few weeks. Pick when dark purple and then freeze until you have enough berries for the batch size you want. About three pounds for a gallon of wiine...

How do kit wines stack up against store bought wines?

My fruit wines stacks up great. Costs me about 2.00 bucks a bottle that is far superior to 12.00 winery grade blackberry wine. That goes for all my fruit wine.

Went to homebrew festival, horrible off-flavor everywhere!

I was at this same homebrew festival. I completely agree with your statements regarding the beer. It was horrendous. I tried about 10 different styles and ended up tossing about half of them as they were undrinkable. There was a cider that was nice. Only one corny keg and it went fast...

Wort was 65 degrees. Lid was only off about 10 minutes. Just long enough to rack to the keg.

Is my yeast still good to use?

Yesterday I racked a red ale from primary to keg. I left the last little bit of beer and all the yeast in the bucket. I put the lid and airlock back on the bucket. Today I brewed an amber ale and poured the cool wort into the bucket with the left over yeast from the day before. Is my...

    So I found some kegs...

I second looking for used co2 cylinders. Look for a local company that does the hydrostatic testing on out of date compressed gas cylinders. That is whata I did. I got a 25 lb tank for 55 dollars.
