Ok, I dont know what to do with all these ingredients I have knockin about. Anybody care to throw any suggestions my way?

I want to brew a few small batches just to experiment but only have 5 gallon buckets for fermentation and was just wondering is there any harm in putting a 2 gallon batch into a 5 gallon fermentor? :confused:
Will the air in the fermentor cause the beer any harm or will the co2 coming from...
I made a starter from a wyeast smack pack last Saturday planning to brew on Sunday but a whole load of stuff got in the way and now I probably wont be able to brew till this Saturday. I'm just wondering what effect if any will the weeks wait have on the starter? Will it still be good...
