Possible infection - but what is it?

I've been brewing for a few years and haven't had an infected batch yet. I did a low gravity (1.040 or so) mead which was fermented in a covered bucket with SA-05 and WLP720. It is down to 1.004. I'm seeing a pellicle of some kind on the mead's surface. Does anyone recognize what this might be?

    Which yeast to sour with?

A friend of mine brewed an agave Belgian dark strong that he wasn't able to get to ferment out. Rather than dump it, he gave about three gallons of it to me. I'd like to sour it, but I'm not sure which yeast would be best. I've tried searching and I swear I've seen information on the flavors the...

    Hahn - Super Goes In

I don't think this is the best way to crush grain but I know I want my brewery to look like this:

    Berliner Weisse lag time?

I've been wanting to brew a second batch of berliner weisse, to compare to my first batch which used sour malt to produce the sour character. I picked up a packet of Wyeast 3191 from September of 2010 (didn't notice the date until I got home). Once I noticed how old it was I decided to make a...

Would you clean up for another homebrewer for money?

So I found a local Craigslist post where a local homebrewer says he loves brewing, but doesn't love the cleanup (not that I blame him, but…). He's offering $15 an hour to do his cleanup. I'm considering it (two hours of cleaning == one batch of beer). So if someone was paying you to clean up...

    Sanctification suggestions?

So I finally hit up Russian River for the first time and had a sampler. Excellent beers, but my favorite was Sanctification. It's a 100% Brett version of Redemption (or so says the bartender). I'd love to make something similar; can anyone recommend where to start?

Water heater elements and food-grade bukets

I'm wondering if anyone has tried something like this before: I'm looking at building a temperature-controlled water bath for homebrewing and cooking. I'd like to have a large capacity (mostly for homebrewing) and would like to keep my costs reasonably low. My goals will be to be able to...

    Flavor changes while kegged?

So I recently switched to kegging from bottling and overall I love it. However, I've been noticing a reasonable amount of flavor variance as I go through kegs; it's a bit odd. On my ginger stout there would be days when the ginger was quite tasty and others where you wouldn't notice it at...

Minimum time before bottling, assuming healthy fermentation?

I've been reading up on fast, low-gravity beers, and I've seen that the keys to a healthy fermentation are pitching a good starter and good temperature control. I've got a stout I started on Saturday; it's a 1.044 beer that I pitched a good starter to. Picked up right away, bubbled like mad...

    Yet Another First All-Grain Batch

Brewing up a batch of Ó Flannagáin Standard's stout. Mash tun is an Igloo Ice Cube cooler, using a turkey fryer burner + pot. Mash started about 4°F hot (158 rather than 154) but I was able to drop it pretty quickly with some cool water. Temp seems to be holding well. I think I mashed in...

Low O.G. on a recipe converted from all grain

I recently was given an all grain recipe for an interesting-sounding AG scotch ale. Since I don't have the gear for all-grain yet, I read up on converting recipes and thought I had a handle on it. The recommendations I saw were .6 lbs DME to each pound of base malt. To be sure I didn't mess...

    Force carbonate in PET bottles?

So I was looking over kegorator/keezer setups, and was getting into the idea of force carbonation. So I decided to have a go at force carbonating soda; in a burst of insufficient thought, I grabbed a 20 lb CO2 canister, some tubing, a regulator, a carbonation cap, some hose clamps, and a...

    'Allo from Sacramento

Figured I'd stop by and introduce myself; I've been brewing for about eight months and I've done three batches so far; an IPA (Wasn't bitter enough since I forgot to dry hop), a Red Tail Ale clone (deemed "Unremarkable, like the beer it's based on" by tasters), and a honey porter (well-recieved...
