Vienna Lager Eliot Ness Vienna Lager Clone

I would cut the hops ~1/2 if your going to lighten the body. This is on the hoppy side for a Vienna lager and would be very hoppy on a lighter base. You should be fine to keep the speciality grains the same especially if your steeping, not mashing them. Sent from my iPhone using Home Brew

Hmm, yeah, i highly doubt that you got bad ingredients from AHS. I've ordered from them many times without issue. Are you 100% sure the flavor you were getting was grass? Not vegetable, corn, buttery or apple? Just trying to help narrow down the cause. Sent from my iPhone using Home Brew

Vienna Lager Eliot Ness Vienna Lager Clone

I'd like to see how the WLP Bock yeast (833 I believe) would do in this beer....I've had nothing but bad results with the s-23. Sent from my iPhone using Home Brew

That's a bummer paulkantor! Only time I've heard of grassy flavors have been from bad hops or sometimes old malt. How do you store your hops? If you don't already, put them in the freezer until you use them. I saw that this was your first all grain attempt, how did the brew day go? Sent from...

Vienna Lager Eliot Ness Vienna Lager Clone

Use 2 vials. I may of just used 1 vial, but error on the side of caution and pitch more. A big lager like this needs a lot of healthy yeast. Sent from my iPhone using Home Brew

Sediment isn't indicative of gushers. It really depends on when you bottled. Did you make sure you had a couple steady gravity readings before you bottled? Depending on the yeast you used, you could of just racked more trub to the bottling bucket or there was more yeast in suspension when you...

I've always smelled some orange when transferring. Not a ton though. I noticed it more during fermentation. I think that you made the right call with waiting for the Amarillo. I've made a couple variations of this recipe, and I've found that late hop additions tend to mask the orange too much.

Correct. Using a German wheat yeast (Like WLP300) will impart a drastically different flavor profile. This recipe is meant to be very clean, crisp and a hint of citrus on the tongue.

Not at all, any clean fermenting yeast will do fine in this recipe! Cheers :mug:
