I don't aerate. If you're lazy and cheap like me, you can get a wine degasser wand, attach it to your cordless drill, and whip the hell out of the wort before adding the yeast. I find this to be easier and more effective than sloshing the fermenter around.

The BBC (Bend Brewing Company), Silver Moon, and 10 Barrel also have some great brews. The McMenamins pubs in town are really cool, but the beer is kind of "meh." The Deschutes pub will have lots of interesting stuff you can't get in bottles or on tap in any bars, check it out.

With a 7.5 gallon pot, i think you should just go for full boils.

Add just 1/6 of the extract at the beginning of the boil. Add the rest at flameout. Boil as large a batch as possible with your equipment. If you upgrade to equipment that lets you do full boils (like a propane turkey fryer, for example) that will help as well.
