    Beer Alchemy gives weird OG

Hi all, I've used Brewpal for a while and it's always been pretty decent. But wanting more flexibility I downloaded the BeerAlchemy app for IPhone. It's great...except the OG is always WAY off and I can't figure out what I'm doing wrong. Example: 5 gal batch 10lb of 2 row in BA = 1.034 10lb...

Any improvements on this Light Hybrid Honey Toast?

Well, it's not the honey. It seems that Alchemy is giving lower sugar extracted for every grain. Rats. I hate trying to figure this out. But I think I'm shooting for a 25 ibu, balanced approach to the hops. To do that, it seems 2 oz at 30 might do the trick. Or maybe 1 at 30, 1 at 15 to get a...

Any improvements on this Light Hybrid Honey Toast?

You're right! I just ran the recipe through BrewPal and it gives me 1.052 with the Honey, but BeerAlchemy gives me 1.042. I can't figure out the disparity! Efficiency is 70% in both programs. What could it be? I think I'll take the honey out...agreed, plus it's messing with my color.

Any improvements on this Light Hybrid Honey Toast?

Is it just the honey that you think is off kingwood-kid? Something else funky about it? Great idea on the higher mash chuckstout

Any improvements on this Light Hybrid Honey Toast?

Hello all, I've been brewing for about 4-5 years, and just switched to all-grain about 2-3 months ago. I've made edits on existing recipes, and copied recipes directly and have had good success. But the time has come for my first truly original batch and would love some opinions. . So, here...

Did I just make a bottle bomb?

Thanks all for the input. I was hoping to just add sweetness and hence the Splenda. The concern was really a potential infection. I just figured if it's inside a Sealed package, it's going to be bacteria free. I guess I'll just keep an eye on it. Yeah, the rotten watermelon was just like...

Did I just make a bottle bomb?

I bottles a couple beers this weekend. A mirror pond clone, a great German Hefe and a bit if a disaster: a watermelon Hefe. Knowing it was going to be a bit tart, I decided to add some splenda right before bottling. But all I did was open the splenda packages and pour them into the bottling...

    dry hopping

2 weeks sounds a bit much. Im dry hopping for the first time today and after all the research found that 7 days is about right. I'm doing an American Pale Ale with about 44IBU's (Mirror Pond Clone) and am using a full ounce of dry Cascade at 7.8AAu's (although I don't think the AAU's matter for...

Help with getting Fermentation Temps lower

I did the whole swamp cooler and t-shirt thing, but the truth is, it's a pain in the arse and has limited results. Easiest thing: get a used freezer off craigslist for $50, get an external Johnson temp control for the freezer for $65 and you're done. Plop your carboy in the freezer, dial in...

    Mirror Pond by Deschutes

I'm about to try my hand at this delicious APA. I see a bunch of recipes here, but no one is screaming success. What gives? Has anybody got the Mirror Pond clone right?

    Johnson temp contol question

Good luck. I love mine. Upright fridge about 4.5ft high. Fits 2 6 gal buckets or carboys and a couple starters. Works beautifully. Just popped in a Paulaner Heff clone on saturday, set the Johnson to 65'ish and the therma-tape thingy on the side of the bucket reads 68. Couldn't be happier. The...

    Johnson temp contol question

I just bought one this weekend at my LBHS, it came in the Johnson box, sealed and had a power cord. Can't see how you'd work it without it. It's not a regular power cord. The plug that goes into the wall has an outlet on the plug itself to plug the freezer in. It works by cutting off power to...

    High FG

Here's the link to your yeast's info. Wyeast Laboratories. British Ale™ 1098 You have an attenuation rate of 73-75%, which would mean, based of an OG of 1.062 you could have an FG of anywhere between 1.016- 1.017 (multiply 62 x 25% or 27%). So really, 1.020 is pretty close to dead-on...

    High FG

Look up the attenuation rate of the yeast. If it's 65%, say, then you multiply that by 62 in your case and you should get your FG. If it's too high, it could be that you burnt your wort some, didn't have a robust fermetation (ie underpitched) or somehow damaged your yeast. Regardless, it's...

Help! My black Russian baby is stuck!

Thanks Enderwig and Bill, I think you and I were typing the same conclusion at the same moment. The beer tastes truly fantastic. My favorite ever. Is it a bit sweet? Yeah, probably. But is it unheard of to drink a beer with a FG of 1.030? It has 100 IBU's, so it sort of helps with the...

Help! My black Russian baby is stuck!

OK. Now I'm a bit confused. I just looked up the attenuation rate of the yeast and it's low: 63-70%. So maybe I'm not stuck???? Am I calculating this right? OG: 1.096 Attenuation rate: 70% (best case scenario) Expected FG: 96x.3 = 1.029!!! The recipe calls for a FG of 1.020. How can I get...

    Harvesting Paulaner Yeast

I don't think you need a wheat DME starter. As a matter of fact, the Paulaner recipe (from Clone Brews) calls for regular DME as well as Wheat. Not only that, but Wheat DME is only 60% wheat. 40% barley. So I think you're fine with plain ol DME starter. I've actually just bought all the...

Help! My black Russian baby is stuck!

Thanks! Now, would you say leave it in the primary (even if is a bit too warm for the yeast 77vs68) or rack to secondary? And how slowly is slowly? Could it potentially take 2 more weeks to get from 1.032 to 1.020? Or are you talking 3 months?

Help! My black Russian baby is stuck!

I'm brewing a clone of a Stone RIS. The recipe is a mini mash and has a starting gravity of 1.096. I hit it dead-on and everything was per instructions, but I screwed up my fermentation temp. Instead of 68, I fermented at 77. I know, I know. Fusels and banana stuff. But I'm getting a fridge...
