    Lots of Yeast

    I picked up some harvested ale yeast from a local microbrewery. I ended up getting about 8 oz of harvested yeast in my 12 oz jar. Its been refrigerated and it looks like its pretty much all pitchable. I'm making a 5.5 gallon recipe on saturday, 1.050 OG. This seems like waaayyy too much...

    I recieved a water report from the Wilkins-Penn Joint Water Authority. They provided everything I needed except bicarbonate levels. Is there anyone who uses this water supply that has this information? Thanks.
