    Mystery Fowl

The Guinea hen breast is really nice. It overcooks quick. It is pretty lean and a little pig fat is nice, caul if you can find it, or butter under the skin. The leg and thigh are fantastic braised. I do them with dried chiles, oregano, light tomato broth and whatever is at hand.

    Letting unboiled wort sit

If I prep my recipe, weigh my grains and hops and get my stuff out of the closet the night before, I can do an all grain in 3 to 3.5 hours. Cleaned up. I am not rushing, and do not do anything unusual. You may just find that your efficiency and speed gets better with experience. I think if you...

    American Light Ale

Thanks, I add the gypsum to some recipes because my water is very soft. I do not have an analysis of my specific water, but the county posts one of my area. So it may be a bit off but is better than nothing. I added it to this because there is not much chrystal or other dark malt, so I am...

    Hops pellets accidently got wet

If they are now frozen in a block of ice, they might be hard to weigh to use, but I wouldn't think they would be unuseable. I don't know if it is relative, but large fish companies spray the fish/shrimp etc. with water before freezing to protect the product. Out of curiosity, how much hops got...

    American Light Ale

I have never made a blonde or light ale. Any thoughts on this recipe would be appreciated. As you can see it is mostly about the hops. I want to try the Chinook & Cascade for piney-citrusy flavors. Not sure about the grain bill, the 40L is mostly for a little color. Should I go with a full...

    Tomatoes in the beer

Without being toooo negative. Bleach or tap water in the secondary are very bad. I have used 3 or 4 pounds of tomatoes in a recipe and had it too little flavor. Bleach?

    Tomatoes in the beer

I’ve done a few tomato beers and they are Pretty good. Share the recipe if you can. I havn't come up with anything great but think it has potential. As for sanitation: I have added fresh tomatoes to the primary. I dip them in boiling water for 1 min to kill any funk and wild yeast on the...

    What do you miss?

I had an 70 Delta 88 with a 455. The thing weighed like 2 tons. It needed the 455 just to get around. But, I could fit 8 people, comfortably, in that car. I dont miss it. But I do miss the 4 door 70, maybe 72 Chrysler newport custom with a 455. That car was even bigger, but it did roll! And...

Are u irritated by complex recipes like i am?

Although your comment is reasonable, logically, why would you want to post something so negative? It is clear what the OP is looking for. If you are, or are not irritated by complex recipes, you should join the conversation. If you just want to criticize someone, why not go away? Have a nice...

Are u irritated by complex recipes like i am?

I think you got it, but missed one. The pragmatic! One who likes beer, and wants to brew the beer he(she) likes. And maybe brews a thing or two seasonally, on a whim or need. To the OP: Don't compare yourself or your brewing to someone elses. Compare yours to yours. In my opinion, that...

    Mystery Fowl

Seems the butcher ought to know what it is though. Unless youre in a grocery store. Most grocery store butchers dont know a teres minor from a flat iron steak!
