    High Gravity Hangover

I didn't make a yeast started, but I did pitch one Wyeast Activator 1056 #179 American yeast, one package of dry American Yeast (56 in red envelope), plus extra yeast off my last batch, however, it had been in the secondary quite a while. I will have to make sure my wife doesn't see this...

    High Gravity Hangover

Bike N Brew, I hope I didn't make "rotgut"!. wikipedia goes on to say that Fusel oil is caused by fermentation at higher temperatures, lower pH, or when yeast activity is limited by low nitrogen content. I will keep better track of fermentation temperature. I try not to overspage, but I also...

    High Gravity Hangover

I live in Seattle, and ferment without mechanical cooling in my garage. I would expect my fermentation was never over 70 degrees, but am not positive. Does this seem too warm? Is there any heath effects of Fusel alcohols other than the head ache (obviously at moderate levels and not...

    High Gravity Hangover

Two 24 ounce bottles of the Barley Wine. I recall with the Imperial Stout even getting a head ache before getting a buzz. Problem was both tasted great.

    High Gravity Hangover

I recently brewed a tasty Barley Wine when trying to brew an Imperial IPA. OG of 1.100, FG of 1.026, IBU's of 122. Used America Ale Yeast. Rest of recipe is located at http://tapmeister.com/display_recipe.php?id=15. My problem is that the resultant hangover and head ache exceeds that of...

    Imperial IPA or Barley Wine

Thanks for the advice. I will incorperate it in my next strong IPA (and enjoy my barley wine until then).

    Imperial IPA or Barley Wine

Thanks for the advise. Yes, it is high gravity. In fact, the final gravity was around 1.025, a little higher than I expected. I pitched with a new liquid american yeast, a new dry american yeast, and some leftover american yeast from the tertriary of a earlier beer, and then oxygenated well...

    Imperial IPA or Barley Wine

I recently tried to make an Imperial IPA. It didn't taste anything like one, but it was an awsome Barley Wine. Can anyone tell me where I went astray. My recipe is posted here. Thanks!

    Bad batch, thinking about distilling...

Distilling is only illegal in the US if you get caught. I met a guy several months ago who says he distills his beer when ever he doesn't have a good batch, and he said it works well. I had previously heard that you never want to add hops to anything being distilled, but did not ask bring up...

    1/6th barrel keg (pony keg)

Kegs used to have a cork on one side, and you might be able to find one (I used to have a 1/2 keg 15.5 gallons). Easy to fill, but sanitary wasn't as easy as a cornelius keg. My recommendation is to buy a bigger fridge.

    A Better Homebrew Calculator?

There are several web based beer calculators already on the web. One is http://hbd.org/recipator/, and I have seen one or two others. Just for fun, I have also been building one which should be mostly complete in a month or two.

    what's a good circulating pump?

I used a Teel for many years, but it recently went bad. Bought a new March, but haven't installed it yet.

    Controlling the temperature

I spent way too much time and money designing and building a microprocessor based controller. Want blue prints for free? http://tapmeister.com/RIMS/RIMS_Controller.htm

    Wort circulation question

I just use a copper manifold with four openings on the top, and try to keep a little liquid on the surface.

    Why is my temp climbing?

I second the inadaquate mixture theory. Also try taking temperature readings from various locations in your mash periodically.

    Predicting IBU's

Hello, I found some great formula's for predicting the hops IBU's (reference Tinseth and many others). Typically all the formulas take into acount weight of hops and alpha acid content, and then figure out a utilization based on time of boil and gravity of the boil. They then divide by the...
