    First Non-kit Brew

I'm considering my first non-kit brew in a couple of months. I'd like to try the Red Dog ESB here on HBT. Since I'm not ready for full grain yet, I'll use 5.6 pounds of Alexander's Unhopped Pale Malt Extract in place of the grain. Everything else will remain the same. I'm having problems...

    Kolsch too dark?

I brewed up Midwest's Cologne Kolsch and racked it to secondary on the 23. Although it's nice and clear, it seems way too red to me. Looking on Wikipidia, kolschs are supposed to be rather light. Using this SRM chart, mine looks to be somewhere between 16 to 20. Is it possible I overcooked...

    Undissolved DME?

I just finished my second brew, the True Brew Oktoberfest style ale. While cleaning up the brew pot, I noticed some small sugar looking grains in the sink. There's no indication of burning, so I'm not worried about that, but is there a problem with fermenting a wort with possible undissolved...

    Fermentation Restarted.

I brewed an Irish Red two weeks ago (first brew without Mr. Beer). I was planing on bottling today but the darn thing started fermenting again. It's been quiet since the third day or so, but Friday, the airlock started bubbling again. Nowhere near where it was during fermentation, but a good...

    Hey from Arkansas

Hey everyone. Just found this place yesterday and decided to join up. I'm new, REALLY new, to brewing - I'm four days into my first batch with a Mr. Beer. If I like it, I'll go "real time" with 5 gallon stuffs after I finish the second kit. Why do I want to get into brewing my own...
