    Underpitch or wait for starter?

    Just finished the boil for a last min brew day Hefeweizen. I only made the starter 8 hours ago and it hasn't done much yet. Would you go ahead a pitch the unfermented starter, or sanitize really really well, wait another 12 to 24 hours, then pitch?

    Do you adjust dry hopping substitutes for AA levels?

    Just brewed a batch last night that calls for dry hopping with 1oz of Centennial (10.0%) and 1oz of Crystal (3.5%). I couldn't get crystal at the LHBS so I'm substituting with Mt. Hood (5.5%).
