    You can use a curing salt with hot smoke, too.

    Local brewery, Yorkshire Square, does all real ales. Currently enjoying their dark mild.

    That looks like a page from Home Production of Quality Meats and Sausages. IMO it is THE bible of meat curing.

    Monkish -- Life as a Shorty Juicy citrus with a bit of dank. For a 4.5℅ beer has a lot of body--tons of dextrine--giving it an almost chewy texture.

    Smog City Bourbon O.E. Lots and lots of vanilla/bourbon flavors in it

    IMO Trumer is probably the best German pils made in the US. Although Victory's Prima Pils is also pretty good when I can get it fresh.

    If you're just sitting in Cellarmaker and wondering what to order next...well they are all pretty good. You could also consider hitting up Mikkeller.

    Rare Barrel in Berkeley. If you like German beers, Trumer, also in Berkeley, makes a great pilsner.
