    One 5.5gal batch of this I did with 1oz was waay too smokey...finally starting to mellow a little after almost a year now. 1/2 oz was the sweet spot for me - that batch is already gone. ;) Could be I had especially strong peated malt? IDK...

    Use 1oz (or less!) of the peated malt unless you want a Rauchbier. Seriously. 0_o Even in a ten gallon batch, 5+ oz is insane...at least if you're trying to match Grants beer.

    US-56 fermentation characteristics

    Not harmful per se, just kind of pointless. A package of dry yeast has a much larger number of cells than a liquid package. All the dry yeast require is proper rehydration and they're ready to go.

    With 4.5 lbs. Wheat LME and 3.3 lbs. Light LME your OG would have to be very close to 1.058 for 5 gallons and 1.053 for 5.5 gallons...unless you left something out. What was your total volume into the fermenter? The higher gravity in the 70s is with the fruit...

    FWIW, a stirplate will allow you to use a much smaller starter.
