Porter with lambic accents/what to expect from brett bruxellensis?

So I want my next beer to be a porter and have been meaning to try out Brett for quite a while. I was reading that many of the historical old porters had significant Brett notes that they picked up from the wooden aging barrels back in the day so I figured why not? This is the recipe I am...

    Saison with Wyeast 3724

So last year I tried a Saison with WLP566 (the platinum strain) and it was excellent and fruity. This year I'd like to try the Wyeast 3724 version. I hear it is more "earthy/spicy" or something... My latest Saison recipe to brew brewed in a week or so: 8 lbs pilsner malt 1 lb wheat malt 1lb...

Why does my mash ALWAYS get stuck?

hi everyone- I have the typical SS braided hose setup in a 10 gallon cooler and my mash ALWAYS gets stuck. Why does this happen? I don't do wheat or anything too complicated but it seems all the flow comes from the proximal end of the hose and eventually this just jams up and I get no flow...

    backsweeting/cold crashing

My experimental 3.5L (about a gallon) of apple cider I fermented with S04 has hit 1.012 from 1.060 and I think I`m ready to bottle it. My plan is to leave it outside around 2-3 days since the flask is too big for the fridge. Do you think this will work? (the highs for this week are all around...

    Dry hop cider??

Hello- I just juiced enough apples to make 4L of cider as sort of an experiment. I added just a bit of brown sugar/dextrose combo to make a starting gravity of 1.055 and fermented with S-04 yeast. I plan to stop it sweet (1.015) by cold crashing early and then bottle and let the residual...

    making unibroue belgian dark

Hi guys- Looking for a little help making my first big belgian beer. I like Unibroue stuff and, living in montreal, i've tried them all. My favorite is called trois pistoles and its basically a belgian dark with some fruitiness (I think from the yeast), and an interesting malt taste. I'm...
