    Fixing a Berlinner Weisse

    I added 15ml to just under a gallon, and it seems to have a nice level of sourness. Can't entirely confirm this immediately, as it's presently carbonating, but I'll get back to you on it after another week or two.

    Lactose in a Berliner Weisse

    The question... How much lactose to use? I've got a small-batch BW going right now - about 2.5 gallons, split between three 1-gal jugs. I'd be willing to experiment with one of the three and toss some lactose in, but frankly I have no idea how much I'd want to use.

    sours and hops?

    Keep in mind that there are beers out there like Wild Devil - IPAs with Brett. A whole ton of hop character would be hard to work out in a wild beer, but it's not impossible to mix hops and brett or other wild yeasts. Just quite challenging, I have to imagine.

    Yes, only 1 gallon. I'm trying it out first. And trust me, if it's good, I'll start up another gallon or more as soon as I try it. Assuming it does finish fermenting in a month, I'll try it then, but I'll definitely save some bottles for 8 months or so.
