    Damn you S04!

I have had to be gone for a week at a time during a ferment, and getting back ONE fruit fly has vinegared the entire schiznocitie! I am now making a blow-off tube into an airlock 'grant' that will have a normal air lock on top of it. It's a 2-stage blowoff air lock, and I hope it helps keep...

Extract Belgian Tripel- My first non-kit brew!

i'd do all the malt at the beginning. unless you think bacteria can't remain viable in a dry, sealed bag. (or the dust on the outside of it, etc.) i'd let the sugar boil at least 20 mins. thats what pasturization in the 170's requires, i belive. 100% Hallertau hops could be nice. goldings in @...

are you storing it cold or at room temp? makes a difference. I start @ 35-40 first day, and shake at least 3 times, and re-pressurize. keep it cold, and slap the gas on it once in a while (at 18). i unhook gas to shake it, don't want no backtracking.

Should I make a 1000 ml or 500 ml starter for this "older yeast"?

its really not that far past, I was going to make a joke about a 2 gallon starter, but i don't think its a joke. at least you'll have a little something to sample while you wait fer yer full batch. (seriously, just pour it in some wort, and let it grow.)

..... (see above) ...... This is Brother "taP". (Brother Pat was a funny, gnarly old coot @ the Burp Castle in NYC (Where else can you rollerblade to, and have a Chimay and a cheese-plate on Sat. afternoon, with Mozart opera playing? HUH?)
