    Yeah they have it on the shelves here now too. Hopefully I'll get better results with the fresh pumpkin, but I would be suprised if it makes much of a difference.

    One other thing.. I couldn't find any canned pumpkin anywhere. So I ended up using fresh pie pumpkins after baking them in an oven for an hour.

    It is in secondary right now, but just from the sample I had when trasnfering I would definately bump up the spice.. Other than that it tasted good, Finished at 1.010, so my abv is up around 8.5%... I'll try to remember to give an update when I am drinking some for real!!

    Looking for a good Imperial Pumpkin Recipe

    Anyone have an Imperial Pumpkin recipe they could recommend? Was thinking of just adding additional Malt, hops, and spice to a recipe I did last year, but figured I'd ask here first. Searching the internet revealed some people asking the same things, but did not find a recipe. Thanks, Ty

    Never had a problem with brewing at nght, but wasn't that worried about bugs in my beer. I figure they will settle out in primary :-)

    I would say it has a bit of a kick, but I am definately used to drinking higher gravity brews, so this one is a sipper for me. I do think a bit more hops would of benefited this beer, and less fruit.

    I just cooled it for one day. Although I will say it went straight into the keg and I force carbed it. Bottling might be a bit trickier? Not sure if you should racki it into your bottling bucket, and then put a lid on it till it warms back up or if that matters. Maybe the swirl and then wait...

    I've thrown them in, and I've put them in a bag, but to be honest I perfer the bag method, just makes less of a mess, and I don't have to leave as much beer in the secondary. If you do throw them in loose, make sure to cold crash the beer, this makes all the hops settle to the bottom.

    Going to add one more to the message above.. The biggest thing that has improved my brews is doing 5 gallon boils. Add to that, patience, and letting the beer age a bit, and whalla.

    I don't know why you think you would need to waste it... I've had good results with just using a "chip clip" on my extra DME. I've kept DME for several months with no clumping.

    It sat on the fruit for exactly 10 days. It definately restarted fermentation, but my guess is it either didn't ferment all the sugar, or the fact that the fruit added color, body, etc. . upped the gravity, but I really have no idea I am just guessing. Either that or my first reading was incorrect.

    The strange thing I ecountered is that my FG was lower before I added the fruit. Must be all the sugars in the fruit did not ferment. My FG before fruit was 1.010, it ended up 1.012 after the fruit.

    I used Safale US-05. For the record it was a good tasting wheat from the hydro sample I tasted.
