I wanted to buy a bunch of liquid malt extract in bulk to save money. I know the stuff is a pain in the ass to work with, whats the easiest/cleanest way to portion out 5lbs from a 50lb pail of LME.

Im trying to find out why people use the liquid yeast or why they hydrate their yeast before they mix it with the wart. Does it effect the taste or what?
I am looking to brew a beer that is decent tasting, has a high alochol content, and made from malt extract / corn sugar (cheap). Would like the alochol around 10%, are there any walkthroughs for such a beer brew?
