    Mead typically improves greatly with age. How much honey and LME did you use? It's certainly possible that some time might help things.

    Headspace when racking to secondary (oxidation)

    Your not going to want to add over half a gallon of water to a 2.5 gallon batch. It would dilute things too much. I think your best option would be to find a couple of gallon jugs, use those as your secondaries, and save the leftovers for future rackings.

    Hops up the chimney?

    I started growing last season, so I'm far from an expert, but I'm pretty sure it would work. I'd be concerned with how you would harvest hops that were potentially 25 feet up though. My first year cascades grew to 17 feet last year, and thy would have kept going if they had anywhere to go.

    Vanilla metheglin

    Thanks for the replies. My batches have been on the beans for a little over a month now and I'm happy with the vanilla flavor. Since it sounds like the flavor will mellow over time, I'm planning to rack off the beans in the next few days and forget about these for a while. Thanks guys.
