    Extra time in the fermenter

Cool, that's what I expected but then I started thinking, and that's usually when things start going badly :) I probably should have just sat back and had another beer.

    Extra time in the fermenter

I brewed up a batch of cream ale and everything went fine, but when it came time to bottle life got in the way and I just put it off. It wound up staying in the fermenter for about an extra month. Will this have any negative effects? I didn't think it would but when I tasted the beer on...

2nd attempt at a cream ale

I brewed this kit once before and discussed some issues I had with it here. While the instruction for the kit are less than perfect the results were pretty good. What I got from my first batch was a little low on ABV but it's quite drinkable. So I'm preparing to brew again tomorrow and am...

    Potassium Sorbate/Campden Tablets - Backsweetening

Is it possible to bottle carbonate a naturally sweet cider? By "naturally sweet" I mean not adding some unfermentable sweetener.

First batch about ready to drink

Thanks, I seemed to recall reading that being chilled for a while had some benefits but couldn't remember where I read it or what would be helped.

First batch about ready to drink

It's been in the bottle for about 2 weeks. I'm not planning to drink it all, I'll leave most of it to age for another couple of weeks.

First batch about ready to drink

Is there any tricks to chilling a HB for drinking? Just put it in the fridge until it's cold enough to drink? Or is there any benefit to letting it chill and rest for a while? A few days? A week? Longer? Just sitting here at work thinking about my brew at home :)

Made BM's Cenennial Blonde, moved carboy, second krausen 3 days later

Or are you saying you just give the fermenter a little swirl without opening it?

    OG too low

So even though my OG was low I should still be looking for something close to the specified FG?

    OG too low

So what should I expect out of this batch? What should I be looking for as far as FG? What will the taste be like? Low alcohol content?

    OG too low

The primary difference between steeping and mashing, other than the purpose, is the length of time the water/grain mix is held at the specified temp? When I read the instructions I thought I was mashing the grains. I suppose I have a lot left to learn, which is what I'm enjoying most about this...

    OG too low

If you look at the pdf I linked, I did step C which is a mash and sparge right.

    OG too low

I boiled my second batch the other day and the OG came out a bit low. The recipe calls for 1.050 and mine came out at 1.030. The kit came with 4 lbs of grains and I think I could have used a little more water for steeping but other than that I felt things went pretty well. I'm not too worried...

    First batch question

Just an update. The batch is now bottled and looks fine. The FG was right in line with what the recipe said. Thanks.

    First batch question

Yes, the kit had both extract and powdered malt. No ingredient tinkering was done. So I should expect the FG to be pretty close to what the recipe calls for, right. When should I start measuring for the FG? It's been a week and airlock activity has dropped off to less than a bubble a minute.

    First batch question

I have my first batch in the fermenter and have a question. I took a specific gravity reading after getting everything in the fermenter but it was significantly lower than what the ingredients kit specified for the og. I didn't sweat it too much but now I'm not sure what I should expect to see...
