    Historic moments for beer

The Meux and Company Brewery, located on Tottenham Court Road in central London, had one of the largest Beer vats in the city. The 20 foot high container could hold 3,555 barrels (511,920 liters) of beer and was held together by 29 strong metal hoops. Several other large vats were also housed in...

    This weeks brew attempt

I thought I would make something a little darker for the wife. She likes darker beers and I prefer the pale ales, although we agree that we both like nut brown ales. So we chatted with the LHBS guru and came up with this recipe. We'll see how it turns out but I suspect it will be a bit darker...

This may be my best batch ever

I just racked a partial mash pale ale into the secondary. It had a slow ferment (10 days) due to the cooler weather staying around 72 instead of the usual 77-80 in the house during the nonwinter months. A nice pale amber with a very mellow taste. OG was 1.054 and was at 1.013 when I put it into...

Article in the paper about beer

I thought this was interesting... ALBANY, N.Y. - A line of taps pouring elegant brews from Bass to Blue Moon beckon twentysomethings packed into Bomber's bar. But 21-year-old Elliot Cunniff orders something homier for himself and a friend. ``Two Yuenglings,'' he tells the bartender...

    My airlock is whistling

Continous stream of CO2, not even bubbles it is coming so fast. Going to have to ditch the airlock and go to a blowoff. I never heard the airlock make a sound before besides the gurgle of bubbles. I guess I better get to it before it repaints the room for me. SWMBO would not be happy.

    Family bottling night

My son and a friend of his (both 17) are very intrigued by the brewing process. When it came time to bottle tonight they both showed up to help and learn. We spent the whole time talking about brewing and they had a ton of questions, starting with, "I have to wash my hands before we start...

    The problem with homebrew

is it tastes so darn good. When I have commercial beer I drink maybe one beer in the evening, but when I crack a homebrew it turns into 2 or 3 easily. I keep mugs in the freezer and end up with a pile to clean the next day when I get into the homebrew. :D

    Priming tabs

I'm going to be starting a batch in a couple weeks (fermenter is full of wine right now) and was considering using primimg tabs in the bottles. Any thoughts? While the mixing of priming solution in the bucket works fine, I'm not getting the carbonation and expermenting with the volume can be...

    Doing my first wine

I racked into the secondary today and have a very nice, deep maroon Valpolicella going. Ended up with about a 1/2 gallon more than I could put into the carboy, so the wife and I both grabbed a cup and started dipping some out to try it. What a decadent way to get wine, dipping from the bucket...

Too much beer at the house

I have about 6 cases of homebrew sitting in the spare bedroom aging. SWMBO is against any more brewing until that gets cut down some...so I ran to the HBS and picked up a wine kit. Now she thinks I am making the wine for her, little does she realize the brilliance of my plan or that my motives...

Cracked open one of the jet fuel bottles

After a couple weeks I decided to try one of the bottles of beer from the last run. The one I posted tasted like JP40 jet fuel. Well.......this is really mellowing out and was downright pleasant to drink. Still has a bit of aftertaste but another couple weeks should fix that up. :D

How many of these have you heard about your homebrew

That'll make you go blind. Isn't that illegal? Shine huh? I won't tell the feds. I don't like dark beer.

Made a starter for the first time today

Talk about the fermentation taking off, wow. I mixed a cup of water with some LME in a bottle and dumped in the yeast about 4 hours before I needed it. When I was ready for it there was a couple inches of foam in the bottle. Pitched it and just looked and the wort is starting to ferment already...

Just put a batch in the bottles

Had a nice pleasant smell, but I had to call one of my friends who brews to ask about the taste. It tasted like jet fuel, he laughed and said he has had a couple like that and after a little aging they came out to be great beers. Sounds strange to me but a lot of chemistry is going on in there I...

Is that mold in my beer?

I just opened the pail to test SG and found this: I'm thinking this can't be good. It has been in the primary for a week, the OG was 1.044 and it is now 1.013. Smells ok and the taste is a bit bitter but no nasty taste or smell. Is this ruined?
