Belle City Winter Warmer Homebrew Competition

Hello! I'm writing to let you all know about the first annual Belle City Winter Warmer Homebrew Competition coming up here in Racine, Wisconsin. This competition will be focusing on 'big, winter beers' and is BJCP registered. The Belle City Winter Warmer competition will be open for...

Taking soooo long to get sour!

I don't know about you, but a lot of mine (at least with BF3) were *really* astringent until they got to around the 8-12 month mark, at which point most of them started getting really good with La Folie level acidity. None of the BF4 have gone the astringent route so far. I have a hunch it was...

pLambic Primary Fermentation in Oak Barrel

Do you re-pitch any bugs every time you put a new batch in, or just go with what's resident in the wood?

Taking soooo long to get sour!

    What about Bugfarm?

    Funky Imperial Stout?

I've done an Imperial Stout based off Madrugada Obscura. I used a 3rd generation slurry East Coast Yeast's Bugfarm3 (no longer available, he's on to the 5th version of the BF now) for souring after using if for a Flanders Red and a sour brown. That was a year ago. It soured very quickly and...

    Jolly Pumpkin La Roja

Al makes his East Coast Yeast strains/blends available through Princeton Homebrew in New Jersey. They have an email list that is sent out whenever new batches come in.

    Jolly Pumpkin La Roja

I also agree about La Roja. In general, Jolly Pumpkin is among my favorite US breweries, but La Roja is just not a good Flanders-inspired sour ale. In addition to the assessments above, it comes off with a strange woody quality that is not beneficial to the overall character of the beer. La...

    Pellicle Photo Collection

This is my version of Oldsock's Deviant Cable Car recipe. I pitched a vial of ECY Bugfarm4 into the primary on this one. Sorry for the poor photo quality. I took it with a crappy cell phone.

    Classic Beer Style Series: Lambic

Cool. That's about what I expected. Since I've owned Wild Brews for quite some time, I'm not necessarily looking for another brewing book on lambics. At this point experience is more valuable to me than one more book full of guidelines and things. However, the historical/commercial info in...

Planning a funky Imperial Brown Porter

I've used it in 1.108 OG brews with no problems. I like the results of other blends better in strong dark ales like this though. I'd go with East Coast Yeast's Bugfarm, or a lambic blend of some sort.

Wyeast 3278 Lambic Blend Viability Question

I was given a few 2 year old packs of Lambic Blend & Roselare once. Out of curiosity I pitched them (and only them) into a 5 gallon batch. It actually still soured nicely. I certainly don't recommend using old yeast/bugs to anyone nor would I normally use them myself, but I definitely wouldn't...

    Classic Beer Style Series: Lambic

I just bought it New off Amazon, so apparently. I'll try to remember to report back when it arrives. From what I've read they updated some of the brewery info for this latest addition.

Wyeast 9097 - Old Ale Blend (w/ Brettanomyces)

Over the course of 20+ brett/sour brews, I've found that I generally prefer the flavor of brett developing in the bottle over giving it 6-12 months in the carboy. (This can depend somewhat on the beer, of course. Lambics, etc get a long carboy aging time.) Look at something like Orval. They use...

how long do you age your lambic

Are you sure Splenda will not get broken up and digested over time by brett? I'm pretty sure a friend tried backsweetening a bretted cider once that ended up overcarbing in the bottle due to a fermentation that picked back up after similar Splenda backsweetening. Splenda is sucralose-based. I...

    Classic Beer Style Series: Lambic

Assuming you meant alternative, Wild Brews by Jeff Sparrow is a great homebrewing book on lambic, Flanders red/brown, etc. I noticed a new edition of LambicLand was released a few months ago as well. I haven't gotten to take a look at this book in person, but it sounds interesting. Anyone...

Is all dogfish head beer expensive?

The 60-minute and 90-minute IPAs are the only 2 of their beers, out of many, that I've actually liked. Thus, I'd say whether or not they are all expensive, they are definitely overpriced! :p

Sizing your Chest Freezer for Corny Kegs

Yup! I've got a couple kegs carbing in it for now without a collar, but I've intended to make one all along. I've got a few friends who've built collars, so I'll be checking theirs out, but I have all the measurements and list of parts put together. Just gotta build it, but I'm not really in a...

Sizing your Chest Freezer for Corny Kegs

Thanks! I just picked up a GE 7.0 the other day. I even got the SWMBO to agree to getting another one for lagering in a couple months! I don't know why, but I never thought about putting the carboy on the hump inside. I was picturing it on the floor. That layout works so much better and I...

Sizing your Chest Freezer for Corny Kegs

I looked over the thread as best I could, but didn't see a lot of mention of carboys. Anyone with a GE 7.0cf able to say how many kegs they can fit along with a 5-gallon carboy or Better Bottle? I was considering a GE 9.0, but then I realized it'd be around the same price for a 7.0 for kegs...
