    I've got a batch of this ready to bottle and I'm debating on using swing tops. I'm going to bottle it still and am wondering how well the swing tops will keep a seal for aging. The plan is to bottle age another 6 months. Any help is much appreciated!

    So I went on a weekend vacation an forgetting I have 5 gallons fermenting I dropped my thermostat to 56 for almost 3 days. The temp on the fermenter was 58 when I got home. It has been going since 11-9 do I have anything to worry about with the yeast or should I pitch some more?

    vanilla bourbon porter question

    I have soaked vanilla beans in vodka for Pumking clone and added both beans and vodka, no noticeable of flavones or anything that I could tell from doing that. I have soaked some oak chips in Woodford Reserve but did not add that with the chips I added fresh at bottling time for a RIS.

    Don't make the same mistake I did with my refrac. I thought I had stuck fermentation on 2 batches because the refrac said I was at 1.040 on both batches.     Sure I'll do it once I get to my brew notes. It's an extract with specialty grains and I basically just got lucky with the recipe. I'd be happy to share it and take any pointers to improve it from anyone else that would like to chime in.

    That sounds like a good plan. Next time I brew this I know to let it sit and not even try it for a good amount of time.
