    I pretty much use bottle-cultured pacman exclusively (in my original excitement I put it on slants, so why not use it). I really associate the smell of pacman with a well attenuated ale... it just seems to allow the malts and hops (and even the alcohol) to really shine through. Hardly any...

    I guess it's possible that you had some dry dough balls in teh mash - but that doesn't seem too likely (they'd have to be pretty big)... beats me, wish I could help. you could add some sugar, a little bit never hurt anyone. Otherwise I say brew a (very) small beer and enjoy it by the gallon.

    Awesome. Thanks. I think it's sort of the nature of the homebrewer to analyze every observation and then tinker with it... teh tinkering is an impulse I have to fight. But right you are, it's nature.

    I've been using some bottle-cultured pacman (from a mocha porter) and it does exhibit all the characteristics of pacman that I've read about. It ferments well at low temperatures (like 60-63F), it is powdery, low to no ester profile. I pitch appropriately sized starters too, so I don't think...

    Better bottles are a polymer carboy impermeable to oxygen through-flow. This makes them better on that front than the ol' polyethylene bucket and cheaper than glass carboys - a good alternative (some would say better) to glass carboys.

    MacBruver, what are the noticeable effects of overpitching, in your experience? Does it lend itself to lower ester production, so that it would be particularly inappropriate for a heffe? Are there other off flavors that are produced (excess diacetyl, fusel alcohols)? I feel that this is a topic...

    Ok, that's good to hear. I was worried about the faster linear speed maybe shearing the husks a bit more. But they're smooth rollers, so that's less of a concern, I guess. I was able to get the rollers because my family owns an engineering company that manufactures a bunch of stainless steel...

    Hey all, I'm hoping this is in the right section, if not, I apologize and administrators can feel free to redirect me. I have a grain mill with 6-inch diameter rollers. What linear speed should the rollers be running at? Right now it is set to 100 RPM, which is 31 inches/second linear speed...
