First all grain, so many questions.

Let's see. I wouldn't worry about mashing too long. Not sure what could happen other than the temperature dropping and getting more fermentable sugars than you expected. Mashing for too little time is a much bigger concern. You are recycling specifically for clarity (vorlaufing). As long...

Help with strong all grain beers

I also like to kick my beers up a bit and I don't know that I feel like I would make a blanket suggestion for mash temps for big beers. You can mash at 158 or 154 and still get the conversion and gravity you want. You can get a more fermentable wort if you mash at 150 but I would still mash and...

Was this the right thing to do

If you're not correcting for temperature on your gravity readings and you had close to your predicted OG after cooling, it sounds like that might be most of your problem. Certainly low mash temp might have made your efficiency lower but that adjustment is pretty crucial.. here's a table...

What location should i pick for fermentation

Everyone's mentioning temps because most beers should be fermented in the 60s. So pick a spot where you're going to maintain 65 degrees. If it's not dark a blanket will do. That said, I live in Tucson and have trouble keeping my temps down. High temp effects the flavor of the beer, but I...

    Steeping without a grain bag

You should have no problem doing that KD. You might try using the strainer and then pouring it throw a thin dish towel/sheet/pillow/cheese cloth to get the really fine stuff out. But I think you'll be ok with just the strainer too.

    Kettles for Extract Brewing

The reasonings here are these.... more headroom allows for boiloff as tom777 mentioned. If you're doing a full boil and need to end up with 5 gallons you need to boil....6.5 to 7 gallons. Another reason you would want a larger pot is because you can use less hops if you boil as close to your...

low IBU, massive dry hop beer?

I recently read that you can get a little too much grassiness from the dry hops if you don't have some IBU's to back it up. Can't confirm that though.

    My first IPA, please advise

I agree with bkirkland, add a 30 minute addition and lose a late addition. I tend to think that the 30 minute addition is more for flavor than bittering though. That's where you get some of the complexity and some of that buttery hop oil thing going on. Your bittering hops at 60 minutes seem...

How to make your extract beer taste better

This may not be in the spirit of the question and I haven't read the article. But since most extract brewers use steeping grains....the best thing I ever did before going to AG was to do some partial mashes. It amounted to adding the steeping grains and maybe a couple pounds of pale malt to a...

My first AG on Saturday, need advice.

Most use 170F for their sparge water temp. For your sparge water you need to calculate how much boil volume you need and subtract what you're going to get from your mash. Your grain absorption will vary but 0.125 gal/lb is a good estimate. So for 13 lb of grain your grain will absorb 1.6...

What do you do about brewing when it gets hot and you live in Texas

+1 to the tub swamp cooler method. I live in Tucson and we have the house around 75-80 in the summer. I have about 12 frozen 20 oz coke bottles. I put my fermenters in a large tub half filled with water and drape a towel around them. I add about 3 of the coke bottles a day and can maintain 65...

    Marking your carboy

Just did mine. Turned out alright. No more half-rubbed off sharpie. Yay.

    Etchedcarboy

Etched my 4 1/2 and 6 gallon carboys. Turned out ok for a first time playing with that stuff.

Just starting out and need advice!

The only advice I would have that hasn't been mentioned is to try to plan for the future a little. For example when I made my wort chiller (was still brewing extract) I made sure it could be used for 10 gallon batches in a 60 qt pot. On the other hand, I rushed into the AG a little by buying a...

    Mash tun losses

I guess I always thought that you can't get less sugar by adding too much sparge water and not collecting it. For example, if 4 gallons is the exact right amount you can add 4 gallons and collect it in the kettle. If you add 5 gallons and collect 4 gallons, that 4 gallons is going to pick up the...

    Homebrew beer V's Commercial Beers

You will have sediment if you bottle, unless you carbonate the beer before you bottle it (like carbonate in a keg and then bottle). The sediment at the bottom of your bottles is from the yeast that eats the priming sugar and carbonates the beer. I don't think you could carbonate in the bottle...
