    Experimental all DME recipe, opinions?

I like the sounds of a "very malty brew", thanks for calculating it all up. I need to try beersmith again, tried it a while back and it was over my head. I don't have the gallon points marked on my carboy, but I poured 3 gallons in to my second carboy which is about an inch smaller in circ...

    Experimental all DME recipe, opinions?

Experimental all DME recipe, opinions? I had some miscellaneous ingredients left over from some previous batches, and had been wanting to try and all DME batch, so I threw one together using what I had. 3lbs Briess Light DME 1lb Muntons Sparkling Amber DME 1lb 50-60 Crystal Malt 1oz...

Can you bottle at SG 1.026?

An update...I may have unwittingly taken your advice Arcane. I uswed The Thief to take my sample to check gravity, and in the process may have disturbed the yeast at the bottom, or perhaps swirled the carboy just enough, because this morning it actually has a head on it? There are lots of...

Can you bottle at SG 1.026?

Thanks ArcaneXor, sounds like good advice...I have always adhered to the 1-2-3 rule. What SG would have been right to rack to the secondary? What options do I have at this point to save it?

Can you bottle at SG 1.026?

Thanks for the reply, I have one of those strips that you stick to the side of the carboy like the ones you put on an aquaruium. I checked it on the first reading, and the strip agreed with my floating thermometer. I had one before that was wrong, and I pitched my yeast at 86 degrees, that one...

Can you bottle at SG 1.026?

Added note: The recipe kit from Midwest had the option for liquid yeast etc. But it came with the dry by default. I'm assuming that they would not give you the wrong type of yeast for the beer recipe they are packaging...at least I hope?

Can you bottle at SG 1.026?

I used a 7G packet of Coopers Ale (Gold Packet), rehydrated and pitched at 74 degrees (both the rehydrated yeast and the wort). I racked it to the secondary because there was no activity in the airlock after the 4th day, I just figured it was done. It didn't seem out of the ordinary for it to...

Can you bottle at SG 1.026?

This is kind of a continuing saga, I posted earlier concerning this batch, about the extreme "hoppiness", which I wasn't expecting. It is a recipe kit from Midwest: Here's the recipe and stats. Superior Strong Ale Recipe For 5 Gallons SG: 1.063-1.067 FG: 1.014-1.018 IBUs ≈ 52.0...

    YIKES! Can it be saved?

Update...after just under 3 weeks in the bottle, the taste has mellowed alot, it still has an aftertaste, but it's improving, so there may be hope yet. Thanks again for all the replies.

    Newby-ish question...long read

I was hoping that was the case...thanks BierMuncher :-) Here's the recipe and stats. Superior Strong Ale Recipe For 5 Gallons SG: 1.063-1.067 FG: 1.014-1.018 IBUs ≈ 52.0 6 lbs. Amber liquid malt extract, 3.3 lbs. Dark liquid malt extract, 2 oz. Mt. Hood bittering hops, 1 oz...

    Newby-ish question...long read

I meant to respond to the mention of the recipes. I'll do that, it might be easier to "troubleshoot" if something goes wrong. The recipe I used was one of Midwests pre-packaged kits, with pretty good instructions, I figured it was proven, or they would have heard about it by now...do you know...

    Newby-ish question...long read

I don't think I will strain mine either, I watched the Midwest DVD, and they mention that straining hot wort (running it through a strainer on the way in to the primary) can oxidize the beer. I'm not sure exactly what that means, but anything ending in "ize" can't be good. I watched a DVD made...

    Newby-ish question...long read

ok...I'll do my best here...when you first tip up the glass, the smell is almost overpowering, I think it is a hoppy smell, my wife sniffed it and said it smells like stale strong beer. Keep in mind that this is my FIRST real batch involving adding my own hops, like I said, I am not counting...

    Newby-ish question...long read

So here is my situation (this may be a long read)…I started brewing in 1987, and back then you had very few choices as far as ingredients and no internet for info. Basically it was hopped kits and corn sugar, and not much else. I took about 16 years off from brewing, and started again a few...

    YIKES! Can it be saved?

Thanks for the heads up Nurmey, I'll never look at my glass of soda the same...I have just decided to start using the ice from the machine at work...I drink the water and know the guy who services it, so I think it will have minimal slime. I bet that is going to make a difference in the beer...

    YIKES! Can it be saved?

Thanks for the replies! I hadn't even thought of the ice as being unsanitary, good point. The ice was made from Reverse Osmosis water, which is far better than any tap water found in Texas. How would one produce "sanitary" ice? I was afraid that I was racking to the secondary too soon, but I...

    YIKES! Can it be saved?

A friend of mine gave me his "starter kit" that he had in a storage area in Texas, which get's really hot. It had been in storage for over 2 years, so he wasn't sure if it was still useable. The hardware was of course fine(or at least I thought it was), but the hops looked like they didn't do...
