    First brew. I think I eff'd up already

    You'll be fine, just chill out and relax :) I doubt you did any damage with the 80 degree pitch, its not optimal but yeast are tough little guys. Only thing you need to worry about is fermenting at consistently high temps (like 80 degrees), which can produce off flavors.

    Old thread, I know...but... Any reason why you couldn't add that second pound of dextrose when using the Wyeast 3068 Weihenstephan Weizen Yeast? It has a tolerance of 10%...so is getting 8.5% out of the question?
