    That malt doesn't have enzymes, so you can't use it as 100% in all grain brewing.

    I'm not fond of Cascade for bittering. I might do an ounce at 60 or FWH and move the other two ounces later in the boil, perhaps as a whirlpool addition.

    Safeale S-33 - Wyeast 1214

    S-33 is the British EDME strain. It's not Belgian at all. It has good alcohol tolerance, so some use it for that reason. For the two beers you mention, a Belgian strain is going to be weird. Stick to clean/simple/neutral. A half packet of US-05, Nottingham, or S-04 would be a better match.

    Legging pressures

    Natural carbing in the keg, when it works, gives me excellent results. I get a better pour, thicker foam, and better mouthfeel. Plus, the keg doesn't need refrigeration. I should warn that natural carbonation in the keg doesn't always work the way I hope. Set and forget ALWAYS works.

    Kettle valve thread size

    The locknut that goes over the thread is 1/2" NPT. If you have enough leftover thread, you could do a female 1/2" NPT elbow or street. Otherwise, it looks like a 3/8" male NPT elbow on the interior threads is the way to go for this project.
