    This is probably the issue. Increase fermentation temperature to 80 - 90F next time. It should improve.

    Why is my mash ph always too low?

    The pH level could be due to warm Calibrate, but you also gotta measure pH of the wort at that calibrated level for best results. If you stick your pH meter in hot liquid, it'll show that it's far more acidic than it actually is.

    Sour/tart Voss kveik

    Overpitching is another common problem with kveik yeasts in general, so you might get a ton of yeasty flavor.
