    Well, bottled her up yesterday. Looked and smelled good. It's got a lot of strong wood and spice flavors that will take several months to mellow, so I guess I'll carefully start trying it out in a few months. Thanks all for the informative and entertaining thread :D

    Do you know any way to test for such a thing before drinking it? The internet seems to think dangerous bacteria are less likely to survive in beer, but knowing before drinking would be nice.

    Thanks for the feedback! I might still go for it as I'm in an old apartment with manual radiators and hence wild temperature swings, but I don't have room for a whole other fridge. Glad to hear it worked, at least. Any other pointers if you were to do it again?
