    Uh oh. Wild yeast? Infection?

I brewed on Saturday. 5.5 gallons of wort into fermenter at about 5pm. I sent my temp controller to 100F because I cooled it too far and needed to get the temp back up for the Lallemand Voss kviek I am using. But then a family emergency came up before I could pitch the yeast. I just got home on...

    Instructions problem. Help please.

Instructions say to out 3.5 gallons water in 5 gallon pot then bring to boil. Then to add the 6.6 lbs LME and 3 lbs DME. So I did that and it is now full to the rim. Can I pull off 1.5 gallons and set it aside then just out it in the fermenter with the rest after the boil?

    Hop Spider as a strainer

Using the "hang on the side" type of hop spider in the kettle, some say it lowers hop utilization while Brulosophy says it makes no difference. Brew Day Simplification Plan

I am trying to simplify my (extract) brew day. I have tried a few approaches but all have had their drawbacks. Using my hop spider blocks using the lid to get rolling boil, muslin bags let through lots of fine dust and particulates, and the mesh strainer over the bucket almost instantly clogs...

    Temperature Issues

Brew day involved way more stress than a "fun hobby" should entail. Oh, it started full of promise. I got up early and mowed the lawn to make the wife happy. Then started prepping to make MoreBeer's Pliny the Elder clone (LME, 5 gallon). I was so excited. And then...I started. Well, turns out...

5 gallon carboy vs 6 gallon bucket for Primary

I am preparing to brew a Pliny the Elder DIPA clone. Should be a vigorous fermentation. I inherited a couple of True Brew 6+ gallon buckets and a couple of 5 gallon glass carboys. I've heard the True Brew buckets have issues with the lids not sealing properly. So here's my dilemma for primary...

Direct pitch yeast for 5 gallon Pliny the Elder clone

As this is a 5 gallon DIPA with a full pound of corn sugar addition in the boil, it seems like it will need as strong yeast pitch to convert it. I am not set up to do a starter or aeration/oxygenation. Best I can do is shake the glass carboy as best as I can and direct pitch. So, to ensure I...
