Kegerator is gone, I am down to 1 corney keg that holds pressure (on hold), the carboys (on hold), pressure canner, mash tun, keggle, elbow sight glass (oh, and the random stuff).

The beer gun just got taken. I'm looking to sell the keezer as a unit, locally, for now :)

I wouldn't recommend this method unless you are boiling the wort and chilling prior to pitching yeast. Spores do survive at temperatures greater than 212F in solutions with the pH of wort. I'd just get a pressure canner and do it the right way. My pressure canned starter wort keeps...

I'd go wth Carafa III de-husked (special), if you can find it. It'll add less bitterness and roastyness in the amounts that you posted above.
