    When to repitch yeast

I really wasn't shooting for anything more than an OG of about 1.070-1.075. So you're saying I should be ok, but just make sure I've got some yeast if the hydrometer says I need it?

    When to repitch yeast

With some high gravity recipes, it is suggested to repitch more yeast toward the end of the fermentation to make sure it is fully fermented. At what gravity should I consider keeping some yeast to repitch and when would you do it?

    First AG extremely low efficency

I doubt the extra 3 degrees did anything to the protein rest, since some say you can go as high as 130 for protein rest. Also I dont think protein breakdown affects the specific gravity much, if at all. Did you do an Iodine test for conversion? Did you batch sparge or fly sparge? Did you...

    Propane usage?

You may as well used preheated water from your water tank to save time and propane tank fills. I ran it through a carbon filter out of my house faucet and filled my HLT and it was at 114F instead of 70F.

    Same batch, different yeast

I brewed an Oktoberfest recipe about 2 months ago and did an experiment with wyeast german ale and oktoberfest lager yeast. It's amazing to see the differences and similarities: same color, same head retention; more carbonation in the ale; lager is smoother and has more malt flavor; both are...

    Munich Helles Saturday

I brewed my second AG saturday, a batch-sparge of helles, recipe from Beer Captured. Compared to the first AG batch,my temps were off for the second infusion. I did a protein rest, and it was higher than planned at 129F. Then used boiling water (actually my wife had turned the pot off, and it...

    Lagunitas IPA

I like their IPA, I'm in Texas. I bought one of their Maximus, ? a double IPA, but I haven't had a good opportunity to drink it yet.

    munich helles

I found the spalt hops at NB, and bought those and some other goodies, so thanks for the idea. Brewing on May 27, I'll let you know how it goes.

    munich helles

I'm planning on brewing a munich helles, and the Beer Captured recipe calls for spalt and hallertau hops. I'm having a hard time finding spalt whole hops or spalt hop plugs, and I was considering using Saaz hops to replace the spalt. Does this sound like a good idea? Anyone know where to get...

    Batch sparging a 1.100 brew

If you can stomach the formulae in the info from the ken schwartz link found in the dennybrew site, it will give some good calulations and reasons for the calculations to get the proper volume from any amount of grain. In the schwartz (may the schwartz be with you!-spaceballs) paper, there is a...

    Flat beer

How much sugar for how much beer? I had a similar problem and I used the proper amount of sugar with nothing after 4 then 6 weeks. I then took some advice and placed a few grains of dried yeast into the bottles an voila, carbonation! One bottle was even a gueser!! Give it a try, it won't...

    Cold secondary for German Ale

OK, now I'll keep it cold. Thanks, Kai.

    Cold secondary for German Ale

Thanks dudes. The more I think about it, I'll pull it back into room temp and let it go another week in secondary, then prime and condition like usual. My thought is that I just made the yeast go to sleep for a while. Meanwhile "there's beer to be made!".

    Cold secondary for German Ale

Let me know if this is a good idea: Wyeast German ale 1007(I think), went 2 weeks in primary, now in secondary. Beer was still very cloudy, so I put it into my new beer fridge along with my lager ( I did a side by side experiment) to chill a bit. The ale seems to have cleared even after 12...

    best refrigerator

Has anyone posted instructions or diagrams on how to do the wiring? I'm a left brainer, but my electrical knowledge is lacking.

    Kaiser, Very Impressive.

    best refrigerator

So how do you get separate control of both the fridge and freezer side of your side by side? PS, I just racked my experiment of simultaneous ale and lager versions of the same recipe brewed. Tasted both and the lager is winning in taste so far, both are at 1.012 from 1.060 OG
