    Crazy kraussen! Ahhhh

I making a weinhenstephaner clone (wheat beer with special weinhenstephaner yeast), fermenting around 68-70 steadily, and it fermented like crazy (blowoff needed) like most hefe's but the kraussen has yet to receed and it's going in to day 9. It receeded some but for 5 days or so its been about...

    Late extract and hops question.

So if I choose to do a late extract addition, say with 30 minutes left in the boil, but the bittering hops obviously need to be added before, all I have boiling is hops and water? Thats ok, right?

    H20...gatttoorrrrraaaaade. No really, just H20.

Alright so I'm on a well system with one of those water softeners that uses salt to soften the water and supposedly nuetralize any hard elements (copper, iron, etc.?). The water tastes fine I suppose but before or salt treatment system, a reddish residue was left behind in places where the...

    Muntons CarbTabs?

Has any used Muntons Carb Tabs? Described as priming sugar in tablet form and is made from dextrose, dry malt extract, and heading powder. Thinking about giving them a try but wanted to see if simply using dextrose to prime is better or if the tabs are better?

    Warm Hefe Fermentation...

the banana flavor/aroma comes with a lot of hefes, especially if you use a hefe yeast. on top of that, i have read fermenting hefes at warmer temps (71 and up or so) enhances this banana/bubble gum aroma and flavor. by the way alot of people enjoy beers like that! so unless you reallly despise...

    Bottled beer = no CO2 yet :(

I just opened up a bottle of my apricot ale after 8 days in primary and about 10 days in secondary. SG was a little bit above 1.06 and it dropped down to 1.012 or so and stayed there for a few days before I bottled. Now after being in the bottle for just over a week, I'm getting no CO2 bubbles...

    Wuh woh...

I bottled my batch a little less than 4 days ago and popped one open to see if it had carbonated at all and how it tasted. Taste was good but no carbonation! Is it just too soon (I know it i suspposed to stay in bottles for 2 weeks about) or did all my yeast cells quit doing their job? I...

Quick question about DME vs. LME

Sam Calagione's book is the one I use a lot. I'm just going to stick with 6.6 lbs. LME=6 lbs. DME. Rather have a little too much than not enough.

    Opinions...

My girlfriend is nagging me about making a "banana beer" so I formulated one based off of a Hefeweizen in hopes of getting that banana/bubblegum effect using WLP300 (Hefeweizen Ale yeast). But to accentuate it, at the very end of the boil I'm going to use either fresh or dried bananas to really...

Quick question about DME vs. LME

I'm going to try making a Hefeweizen but use all wheat DME instead of LME to keep the color lighter. Do I use the same amount of DME as LME (listed in the recipe) or does it not matter. For instance, if the recipe calls for 6.6 lbs. of LME, do I use 6.6 lbs. of DME? Thanks for whoever can help!

    Apricot Pale Ale

thanks again everyone. to answer the question about being unsulfured; they were. and as far as throwing the puree in there, will that stuff just collect at the bottom so when it comes time to bottle, it will be easy to work around?

    Apricot Pale Ale

thanks for the tips! now what's the best way to cram the apricots into the secondary? in a muslin bag or just throw them in? (obviously sanitized by boiling first)
