why do we wait for the hot break to add bittering hops?

something i've noticed everyone doing is waiting until after most of the hot break is over to add the bittering hop. is the only reason for this to avoid the dreaded boilover? i'm brewing 5 gal batches in a 10 gal pot, and i don't exactly have any boilover problems. due to john palmer's...

    will autolyzed beer ever recover?

i'm a couple AG's in, and ended up with one of *those* packets of nottingham. after a 2 week krausen, i knew something was up... it took forever for my fg to come down. i think my beer sat on the yeast cake for about a month. i figured it would probably be okay, but that's not the case... come...

missed my fg by 4 pts

think it's a big deal? fg is supposed to be 1.012, i'm at 1.016 the beer tastes fine, i'm thinking about just calling it good and kegging it. i made this recipe https://www.homebrewtalk.com/f67/nut-brown-ag-30187/ hit my og perfectly. fermentation has been pretty slow, but i had a krausen...

    Qs about sparging

pardon the rambling, i typed this out at work over the course of like 5 interruptions. :) i've got a couple of ag's under my belt, and i've been thinking about the sparging process. not batch vs fly, but more like the inclusion of mashout. firstly, i understand how a mashout works, but i don't...

just a reminder to always check your gravity...

i lost the baster and had no idea where it was. have brewed a couple now and figured that it would be okay to just keg it and call it good. well... i overshot my fg by 8 pts. guess fermentation wasn't complete. 72 * for 3 weeks with a smack pack, i'm not exactly sure what i did wrong. well...

    greets from the midwest!

kansas to be specific. about as middle as you can get in this country :) i've been an avid beer drinker for quite a while now, and have always been interested in the process. i'm gearing up for my first big brew! i will do my best to detail what i like and don't like. i'm pretty sure one of the...

noob with hb, blessed with kegerator. questions-

hello all, i decided that i want to explore the world of homebrew. i currently have a kegerator, have been using it for over a year now. nothing beats newcastle and boulevard wheat on tap :) anyways, i've been doing some research, and since this is my first time brewing, i want to carbonate...
