When I have needed to use really small amounts of brewing salts, I (fully) dissolve 10x what I need (they aren't that expensive) in a 100g of water and then just discard 90g of that solution. Hate to justify it to a Lab TA but, its probably close enough.
This is just what I have been doing. I usually make 3 Gallon batches. It works great. Use your forearm of your "off" hand across the top of the cooler while you stir the mash with your dominant hand.
Just ordered last night using the new brewbuilder. The only quibble I have is the lack of an obvious way to "buy" immediately after you "save" a new recipe. Other than that, Killer App. Brewbuilder is THE reason I shop there.

If they are 2 1/2 feet tall, that is approx 1.5 times the height of a 6.5 gallon carboy (21"). Keeping the proportions constant, 1.5 times bigger in all 3 dimensions is 1.5x1.5x1.5=3.375 times the volume of the 6.5gallon carboy or about 22gallons!
