    Starter Size and Mr. Malty

I'm about to brew a 1.076 ale and was checking the MrMalty calculator for pitching rate. It says to use 2 packs for a 1L starter (assuming the yeast was produced between 1/2 and 3/8). I typically use 1L starters for a single pack. This ratio seemed odd. Does this seem right?

6 Weeks and still no carbonation

This is bizarre. I brewed NB's Shining Star Pale Ale back in May, pitched a Wyeast 1056 starter, fermented at 64 for 2 weeks, bottled with 4.5 oz priming sugar, conditioned in my 71F basement and 6 weeks this past Sunday still no carbonation. I've never seen an ale like this take so long...

    Looks Great, Smells Great, Tastes.......

So I made a dunkelweizen recently from an extract with specialty grain kit. The recipe called for 8lbs of Wheat LME, .5lbs of 66L Caramel Wheat, .25lbs of 488L Carafa III and an oz of tettnang. I steeped the grains for 30min @ ~150-155F in 1.5gal water. Then removed the grains, added a gal of...

    Fermentation Temperature

My basement has been a steady 62 degrees lately. I'm wondering if I could go without the swamp cooler if I pitch around the same temp or a bit higher. I'm going to use Wyeast 1318 which has a range of 64-74. Any thoughts?

at what point would it help to increase the ambient temp?

So, I've read that some of you guys move your primary to a warmer area toward the end of primary fermentation. If you're leaving the primary alone for 2-3 weeks, at what point would it help to increase the ambient temp?

    Wyeast Activator Starter

After the pack is smacked, how long does it need to sit before being added to the starter? Once it is added, how long should the starter sit (on the stir plate) before pitching?

    Is my basement too warm?

I am planning to brew this weekend and the yeast I am using is a Wyeast American Ale (1272). The temp range is 60-72 F. My basement is a steady 68 right now. Should I be doing anything to cool the carboy or is ambient okay?

    Greetings from Philadelphia

I've been browsing the forums for a few months now so I finally decided to sign up. This site is a wealth of information! Kudos to all who keep it up and running! :mug: I brewed my first homebrew on Sunday and it's fermenting wonderfully. I did a Sierra Celebration ale. I tasted a sample that...
