    I brewed this by the directions and it came out really good. as long as you get your temperature and times right, you're good to go.

    Yeast not settling?

    yeast has finally settled and it's at exactly 1.016! :ban: gave my test sample a try and while it wasn't as "spicy" as I thought it would be, it tasted great. might have to double the nutmeg/cinnamon if you want it to have a real kick. bottling will commence on monday :D

    Dumped my first batch today :(

    had to dump a batch of doppelbock because of a really off, sour/metallic taste.... no clue how it got there but opening 48 bottles and dumping them sucked big time.

    my stout woke up as well, but I have a yeast layer on top that doesn't want to go away! I guess the yeasties are really pushing to hit my FG :D

    Not sure if anyone else noticed but I find Erdinger bottles to be thicker than any other 12oz. bottle.
