    Can confirm this is super tasty, I was lucky enough to get a couple cans from @secretlevel. Loads and loads of rip grapefruit. I also brewed the sorta mostly dead recipe recently, love this grain bill as a base for WC IPAs.

    Nicely done! Looks and sounds great. I have a "sorta mostly dead" clone in a fermenter now and I can't wait for it to be finished. I'm loving these pilsner malt west coast ipas. I really want to try a cold IPA and or west coast pils at some point as well.

    Agreed, 4.6 should be the max, I'm just curious what a higher pH does to the final beer. More of an experiment than anything.

    Nice work! Looks great and sounds even better. One thing Sam said he does to increase body fullness is to add maltodextrin and or brewers crystals. I've never used brewers crystals before but I think I'll give them a shot when I try a Brujos clone.

    Same! In the interview he says he uses no acid, lets the high calcium levels buffer the ph. I think he said he uses a minimum of 250ppm of calcium chloride. If I'm remembering correctly. I try to aim for 4.6 into package. Right at the food safety line haha.

    Please share the outcome of this experiment! I've been toying with something similar, in fact just bought a packet of each of the three yeasts. I wish I had some feedback on your setup but I don't. Looks great to me, would love to see how this turns out and what works and things you would change.
