    Lapsang Souchong (smoked tea) mead

Subscribed, seems to be a good idea! And twice that Brett already said, it's the best sort of tea. I order mine from https://www.harney.com/

Which charcoal smoker do you have?

Nothing criminal, just want to expand my collection. My faithful Traeger (Lil Tex) is safe and sound (and I'm not going to give it away/sell it). Like, I would like to be more involved in the process, playing with temperature, messing with fire etc... Don't get me wrong, pellet smokers are...

Which charcoal smoker do you have?

Sitting at home, playing with my current BBQ setup but got a bit tired of pellets. I've decided to add a charcoal smoker to my collection, something under $400 preferable. I've been thinking about medium WSM (18") - mostly would be cooking for just me and the wife and random guests (just in...

    Experiences with pellet smokers?

That's exactly why I was disappointed my PB 700FB. I have noticed much of the same. After several emails to their support office, and over a year of playing with it, I've come to the conclusion you get what you pay for. Looking through some topics and comments, I realised that swings are a part...

Making hot sauce with good shelf life

My sauce with the vinegar, garlic, honey and capsaicin is pretty stable in the fridge once it's open, but if you want such sauce as this to last outside the fridge before opening, you'll want to use canning techniques. What I've learnt from my experience - is that any sauce, regardless of pH...

    Anyone made miso paste?

How is it going, deadwolfbones? Never tried anything like this before, though I saved a recipe from a different forum several years ago (as author lives in Japan and was taught to make traditional miso paste by locals). Subscribed to your thread!

    Adding Cinnamon to a Cider

I've done cinnamon sticks in cider before. I have warmed half my cider with the cinnamon to kind of mull it then took the sticks out for fermentation. This year I let the sticks go in the fermenter and it still came out decent. I also added some whole cloves to off-set the straight-up cinnamon...

    Non alcoholic cider recipes?

Our kids like this one. Basically it's just mix of apple juice + honey, we also add cinnamon as recommended. I believe it's not the original recipe, but Will mentions the source in the text.

    Coffee water profile

This ^ Personally I just use filtered (we use commercial Brita to reduce Chlorine) for my morning cup, gladly we don't have any issues with hard water. Probably it's not the best solution, but it works for me and missus and well, I admit that we are not cofemaniacs.

I'm sorry but light beer sucks.

Some people drink it because it is lower in alcohol and calories. Others don't really like beer and drink it because it is also generally lower in flavor. Personally, I very rarely drink one when I am in hot tropical country and just want something to quench my thirst and don't trust the water.
