    Yeah, who knows what it was. I thought it could have been wild yeast contamination, especially since I've had some wild yeast starters in the house that I harvested. I'm brewing a beer with that wild yeast now, so maybe a taste/ smell/ pellicle comparison will confirm or refute that potential...

    I plan to keg it but I’ve decided to warm it up and then lager for a few weeks. I’m not in a rush and it seems like if the yeast are strong enough they’ll let me do that without throwing any off-flavors.

    I've actually never had Pliny before! Not sure if we get it regularly here on the East Coast. But this brew did remind me of some double IPAs I've had from Stillwater Artisinal. Yeah the kit was great - if you include the hop extract, it probably includes about 1 lb of hops.

    Tried one (and another) just for you, NGD! It’s phenomenal. No off flavors, juicy hop nose with a slight bitter/ dry / Belgian alcoholic taste. No real head to speak of, but maybe in a week. My best brew thus far by far!

    Ah gotcha, I had always just done 24 hours - great, should be fine then. Mainly I was concerned since I don't have a stir plate and wasn't around to agitate it but life.....uh..finds a way Thanks!
