    Fruit Beer Watermelon Wheat

This beer is fantastic! The only small changes I made was using the Wyeast 3068, 6 cups of juice, 2oz flavoring, and 1 lb of carapils gave it nice lacing and a beautiful white head that lasted all the way! ABV 5.3, IBU 16 OG 1.053 FG 1.012 It is very refreshing and was just what I was...

    Fruit Beer Watermelon Wheat

I will be brewing this beer (all grain) this week but my LHBS was out of the WLP American Hef. that this recipe uses. I went with Wyeast 3068 smak pac. What do you think and at what temp. would you recommend fermenting at with this yeast? Lower temps around 65 to 66 which tend to bring out...

How do you improve on lacing and head retention?

I brewed all grain method Bee Cave Robust porter several months ago and the lacing sucked and head retention was poor. The brew tasted fantastic but just seemed lacking with out the proper lacing and head that should have been there. I do not wash my glasses in the dishwater. I have never...

American Porter Bee Cave Brewery Robust Porter

I did this all grain and I was happy with the taste but the head retention was lacking and there was absolutely no lacing. I hand wash only my beer glasses, so it was not an issue of any dry jet or other chemicals contaiminating my beer glasses. Any ideas on how to improve upon my next batch...

American IPA Dogfish Head 60 Minute Clone (AG) & Extract

Hi Yooper, Just wanted to thank you for this awesome recipe! I brewed this as 12/06/09 true to your original recipe, single fermentation for 21 days then bottled on 12/27/09. My OG was 1.066 and FG 1.012, ABV 7.05. I did use WLP #001 California Ale Yeast. It has been bottle conditioned...

American Porter Bee Cave Brewery Robust Porter

I brewed this all grain today and was planning on following the recipe exactly as the original but as usual I made a slight mistake. I added 16oz instead of 8oz Malto Dextrin! My OG was 1.075 for 5.5gal collected. I estimated a 80% efficiency from my batch sparge. So what do you think the...

American IPA Dogfish Head 60 Minute Clone (AG) & Extract

Thanks, you are so sweet to respond so quickly. I really enjoy all your posts and am looking forward to the beer no matter what the ibu "actually" turns out to be. I think I will add 1oz of Warrior hops instead of the 0.75oz. It is not like I will know the difference between this and DFH 60...

American IPA Dogfish Head 60 Minute Clone (AG) & Extract

This looks like a very popular brew. I just purchased your exact list of ingredients included on the first post. However I will be using WLP001 yeast. I plan on brewing this next weekend. I have some questions. 1. When purchasing the grains at my LHBS the owner was wondering why in the...

How long to dry hop in the secondary?

I just recently purchased a carboy to start doing secondary fermenting. I am making an IPA which was in primary for 3 weeks, then I moved to seconday and added 1oz Cascade pellets in a disposable pellet bag. Are whole hops better, do you bag or no bag and do I leave the hops in the secondary...

What type yeast would be best for a brown ale?

Heinz57, thanks! Amazing, because Moose Drool is one of my favorite brown ales! I didn't mention it because I really wasn't sure how many people have ever tried it or even heard of it. I like Sam A Brown and Sam Smith Nut Brown too. Brown ales are not my favorite style but I like different...

Caps made for twist off style bottles?

I do like many beers that unfortunately have twist off caps but I generally avoid them so I buy only the brands with pop off caps so I can use them for my homebrews. I have seen numerous times to never use this kind for home brews because the bottle capper will not give a good seal with normal...

    Steeping specialty grains

When steeping specialty grains does anyone squeeze out all the remaining moisture from the steeping bag after the bag has cooled down enough to touch? I took my hands and squeezed out a bunch of gooey caramel looking stuff adding it to my boil. I wonder if I squeezed out some unwanted flavors...
