    Yeasty taste?

    I have found with S -04 that if you stop fermentation before the hydrometer reads 1.010 it tastes good. Below 1.010 it has a strange butterscotch taste. Even after a good bit of aging it still has that same taste.

    Aged Cider in Bourbon barrel

    Jack Daniels sells wood chips, for smoking food, that are made from the old oak whiskey barrels. I wonder if you could get the same effect by adding some to each bottle .

    OG 1.050. Never took a FG reading on the stuff i have aging, i just let it go till dry then bottled. the stuff i cold crashed had a FG of 1.010, and has the same butterscotch after taste. also these batches were done at different times, using different packs of yeast. could it be the juice?

    no sugar,The bottle aged stuff is 10 months, I used walmart brand juice. Yes, the butterscotch taste is still pretty strong.

    I have 5 Gallons of cider that i will ferment all the way dry. how much cane sugar should i use at bottling, to get a lightly carbonated cider? Also about how long do i have to let it charge in the bottle before drinking? Thanks in advance

    Can't you let it ferment down to a certain gravity, example, 1.010, 1.020, then bottle. And then as it finishes fermenting, it carbonates. that was my objective anyway.

    Traditional cider?

    Back in the "olden days" what was a traditional cider recipe? and how long was it aged. i can't imagine that they would let it age as long as most people on this site would. Just curious if anyone knows the history.
