    Which thermometer

Well, you have two choices. You can buy a Thermapen now, or you can spin your wheels buying a series of cheap thermometers and ultimately buy the Thermapen a few weeks from now anyway. It's really up to you.

    First Brisket (on the BGE)

If you pulled it at 175, that's why is was dry. You should get it up close to 190. At 175 the collagen hasn't started breaking down yet. After 180 or so that tough connective tissue breaks down like gelatin and dissolves into the meat. That's when it gets tender and juicy. Odd as it seems, it...

attempt pilsner on second batch too ambitious?

You might also consider a Kolsch. Certainly not as hoppy as a Pilsner Urquell or SA Noble Pils, but it's a nice refreshing "lager-like" hybrid that can be femented up to the upper 60's.

attempt pilsner on second batch too ambitious?

That should answer your question. Unless you have a way of keeping at a consistent temperature in the 50 degree range then I think it'll end up being a disappointing Pilsner. I'm sure some will tell you to go ahead, it'll be great, ya ya ya, but my suggestion would be to stick with styles...

How do I end up with 6.5 gallons?

Seems to me the idea is to get the desired gravity at the desired volume...not an exercise to get the max sugars from a certain amount of grain. So if my goal is to collect 7 gallons pre-boil at 1.040, that's what I do. I'll even water it down pre-boil if it comes out too high. It should be...

    Iphone BeerSmith app?

If either BTP or Beersmith could develop an app that worked across both platforms (PC and iPad/Android) and utilized something like dropbox for file synchronization they'd blow the other one away. As it is now, most of the full mobile apps like iBrewmaster aren't very enticing because there's no...

Beer product placement - good and bad

The most elaborate example of a product placement change was probably the film Demolition Man. Originally every restaurant in the future was a Taco Bell (Taco Bell being the lone survivor of the fast food wars) and then in some later release of the movie they'd changed them all to Pizza Huts...

    Munich Helles Munich Helles

Eh, from the Homebrewing Wiki: "Dimethyl sulfide (DMS) is an organic sulfur compound present above its flavor threshold in most beers. Because of its low flavor threshold, 10 - 150 ppb, it is a primary flavor and aroma compound that makes a significant contribution to beer character...

Pulling my hair out eff % ?

See, I know what you're saying but it seems lost on everyone else as they seem fixated on something else. I let it go because it doesn't seem to matter anymore to the OP. But yeah, x hops in 4 gallons of final volume is going to be far different than the same amount of hops in 5.5 gallons of...

Pulling my hair out eff % ?

Well, yeah. This seems obvious to me. I wonder if people are talking about two different things here. If I understood the OP, he missed his gravity and adjusted for this by boiling the wort longer, effectively concentrating the wort to produce his desired gravity, and by extension ending up with...

Pulling my hair out eff % ?

Eh, but unless you decrease the hop amount to accommodate for the reduced volume, you'll still be off. It's unclear whether the OP made that adjustment.

Victory Brewing is dead to me.

And Prima Pils. They could kill, grill, and eat kidnapped babies on the premises and I'd still buy their stuff.

    2011 Boneyard Brewoff

Thanks for the heads up. I went 2 for 3, silver with a Traditional Bock and silver with a Foreign Extra Stout.

    2011 Boneyard Brewoff

I hope that's the case this year. Sounds like the judge pool was severely depleted by the Longshot competition. Oh well. If I'm a loser (as I suspect that I will be) I can always blame it on sketchy judging, right? ;)

    2011 Boneyard Brewoff

To be fair, I don't think it's a bad competition. They're just slow. I know that many in our club have entered Buzz before in order to get feedback before the Indiana State Fair Brewers Cup, which is early July. Last year Buzz didn't get the sheets back before the State Fair entries were due at...

    2011 Boneyard Brewoff

Our club won six medals there last year, and well, four of them were mine. :p This year I was the only one from our club who entered. The rest were too irritated by the last two years to enter again. It's not just the immediate results, but the score sheets didn't go out for a month. Btw...

    2011 Boneyard Brewoff

Well, none of those are mine. But on the bright side none of those were in categories that I entered, so I still have undamaged category medal hopes. :) Thanks for the link.

    2011 Boneyard Brewoff

When is the awards ceremony? Before the party? At the party? What about yesterday? No one could find a few minutes to post them yesterday? How about today? Will they be posted today? They are getting grief because it is like this every year with this competition. There are threads each of the...
