    Short Fermentation?

    I find myself walking down stairs every couple of hours to look at my carboy during fermentation. My last American Wheat brew bubbled solidly for 9 days. Hope yours turns out well.

    secondary fermention or not?

    I've always used a secondary carboy to condition and reduce sediment in the bottles. It only cost $20 from my local brew store, definitely worth it.

    Long Fermentation

    Good to hearHB Bill. My Hefe Weizen has been in the primary 10 days tomorrow, but I'm going to rack to the secondary and add raspberries (not necessarily in that order). This'll be my first fruit brew, hope it turns out well.

    Thank you very much for the advise on using a 6 1/2 gallon Carboy secondary. I had actually planned on adding it to the 5 gallon secondary I typically use. Everyone have different ideas for when to put in the puree, I think I'll end up adding it to the secondary.
