Under pitching and then re pitching

Is there a downside to pitching the other strain after initial fermentation has stopped? I've read that this can help clean up any Diacetyl and other unwanted flavors. Since I really want to highlight the banana, I was planning on fermenting on the higher range of temp. So my thought is that...

Under pitching and then re pitching

Ok. Makes sense. I thought about this, but maybe I was getting too cute. Thanks very much.

Under pitching and then re pitching

Oh, and the WLP380 is also pretty old. About 25% viable.

Under pitching and then re pitching

I planning on brewing a Hefeweizen this weekend. The LHBS only had one packet of the Wyeast 3068 that was a little old. Even with a starter, I will be under pitching. Which I'm not too upset about, because I'm hoping for a lot of banana esters. I am worried about any other undesirable flavors...

    Can you re-bottle?

That's what I was afraid of. If it were just a little bit of sediment, I wouldn't be too worried, but there's a lot. Oh well. I'm just gonna roll with it. Thanks.

    Can you re-bottle?

I have a peanut butter porter that I'm hoping to enter into a Homebrew competition. The problem is that there is a ton of yeast at the bottom of each bottle. I should have cold crashed it, but had never done it before and never had this issue. I'm worried that I will score lower due to the fact...

Florida Homebrew competition- fruit in an IPA?

Thanks for the help. Pineapple was what I added to it. It's not overwhelming, but it's definitely there. I only added fruit to half the batch, so I'll still have something to enter regardless. I was just hoping to enter both versions. I'm wondering if I would be able to enter it as a fruit beer...

Florida Homebrew competition- fruit in an IPA?

I'm entering my first Homebrew competition soon. It's an IPA only competition. My question is if an IPA that had fruit added to the secondary can still be entered as an IPA under BJCP guidelines? I know there's a fruit beer category, but this being an IPA only competition, I can't enter it as a...

    Ferments like crazy...then nothing

Thanks for the help everyone. I have a much clearer idea of what's going on now. This was also my first batch using a Hefeweizen yeast. A bunch of firsts for me with this batch, so I appreciate the help with my questions.

    Ferments like crazy...then nothing

As you can see, the only way I have to control the temp is my thermostat. I have that set at 72, which is a few degrees higher than I would ideally have it, but setting it any lower could get pricey here in Florida. I wouldn't think the few degrees would make such a big difference, but I get...

    Ferments like crazy...then nothing

Cool. Thanks for the help! I was kinda hoping that it might be a seal issue. The airlock was definitely pretty grimy, so that would make sense if it were clogged.

    Ferments like crazy...then nothing

Hi, I'm relatively new to brewing. This is my 7th batch overall, and my first all grain. This was also my first time using a yeast starter. (WLP300) Yesterday I put a Hefeweizen (O.G. 1.066) in my 6 gallon bucket primary fermenter. When I woke up this morning, the airlock was filled with...
