9-16-08 Cascade Pale Ale Brewing Now!

Everything Laid out Mash in progress. Heated water to 165. Turned burner off and put grains in. Temp went up a bit due to hot burner. ( duh) rookie mistake. Held at about 170-175 for about 3-5 minutes before i could get it cooled. Cooled it with chilled water. Got down to about 140 for...

    Moving from primary to primary

I just ran out and bought a new primary bucket because i found that i have a VERY slow leak around the spigot on my current primary ( which from now on will be my bottling bucket ). Due to high shipping temps it has not yet started fermentation (at least visually, bubbles and such which i know...

    Yeast shipping concerns

Posted this last night but got no responses... I recently bought a kit from an extremely reputable HBS and although i had them add the ice pack in order to keep the yeast cool i did not pay for the faster shipping method (derrr). Needless to say in the 4 days the kit was boxed the ice pack...

Should I use sugar or Malt?

When i buy a kit (ie. Coopers, muntons etc...) from the LHBS they always reccomend that i use an extra LME instead of the 2 LBS of corn sugar that the reciepe calls for. I have found that this gives the beer a SUPER MALTY taste that i do not particularly enjoy. Does anyone else agree with their...

    Carbonation question

I am brewing 4.25 Gallons of Northern Brown Ale from extract. I have found that my past few brews have been WAY over carbonated for my liking when i use 3/4 of a cup of corn sugar for 5 gallons to carbonate. Due to the smaller size of this batch would i be way off to only use 1/4 or 1/3 of a cup...
