    OK, I pitched the 1056 and lo and behold, I have a lot of action in the primary. It's churning and there's a healthy krausen on top. Looks like this one will be fine. I held off on the Kolsch and will brew tomorrow with powdered yeast. Thanks for your insight and suggestions!

    Get one of each so you can ferment(5 gal), rack to the secondary (6 gal) and start a new batch the same day (5 gal again). Get 'em both, you won't ever look back. fat x nub is right, you will need headspace for the krausen and a 6 gallon carboy allows for that extra room. -E

    The best advice I can give you is to use a put made of copper preferably, or Aluminum, both transfer heat far better than stainless steel. Stainless steel can slow down the cooling process by a huge factor. That's why in the refrigeration field coils are made of copper and not stainless steel...

    2 words, Wort chiller. This was the single most stress relieving purchase I have ever made. Well worth the investment of buying one, or make one yourself. You can still add salt to the icebath in conjunction with a wort chiller for a double whammy. -E
