    Yep it is a brand new ETC which I got about a week ago. I tested the freezer without the temp controller a few weeks ago and it is definitely working correctly. I'm going to try a few more things and report back. Thanks for all your help guys. Cheers!

    Yep you are correct. I did not realize the ETC did not have user settings. I'm going to test the method of utilizing the gel from the ice packs inside of a soda bottle tonight and leave it overnight to see what happens.

    I just insulated the sensor with an old beer coozy I cut up and taped it shut. I then taped the sensor to a growler filled with room temp water and put it on the middle shelf in the chest freezer. I put the ETC to a desired 40 F and the freezer kicked on. The freezer only ran for about 3 minutes...
