Winter Seasonal Beer Holly (Christmas Ale)

Am planning on brewing 10 gallons of this, should I double the spice amounts from the original recipe?

    Best Way To Control Temp

My setup is pretty basic and works well in my cool basement, on each fermenter I have a pipe heater tape with the thermostat removed wired into one of these temp controllers...

    Tons of Foam

Check the silicone o ring where you connect the beer line, could be letting air in, also, have you tried swapping the picnic taps between the two kegs, are both keg connections the same? I had some pin lock connectors a while back that were shorter in height, on certain kegs they would foam...

Three weeks on Belle Saison too long?

I routinely leave my beers on primary for 3 weeks, never had an issue.

    Back to BIAB!

Everything I use pre boil gets a rinse or wipe down only, I never use soap, just warm water, hop bag is green, BIAB bag is brown, mashtun cooler has brown stains. I've never had an issue with any off flavouirs or infections in 15+ batches. Boil kettle gets a scrub with a semi abrasive pad to...

    Back to BIAB!

This is where BIAB using a cooler for the mash is king, you are limited only by the size of the cooler as far as grain bill goes, I do 10gal batches and have never come close to running out of room, even on higher gravity beers.

    Chimay yeast (Trappist ale?)

Good info, will ramp it up a few degrees more to finish it, thks.

    Back to BIAB!

I BIAB in a rectangular coleman cooler rather than a kettle, my GF made the bag from an old voile curatin. I switched to this method as I can position the cooler at a height that allows me to easily manage the bag and drain the cooler into a pot or kettle (knee height). I found with the bag in...

    Chimay yeast (Trappist ale?)

Thks for the info beerswimmer, I will keep it at 74 until the weekend and then use the cake to ferment my dubbel. I think the DME batch I brewed finished high because of the DME and perhaps because I left it at 70 or so for the entire 3 weeks. The all grain version dropped to 1.009 in 8 days so...

    Chimay yeast (Trappist ale?)

I was given a jar of yeast from a fellow brewer which began as Chimay bottle dregs. My friend brewed a Belgian table beer on it before I got my hands on a jar of the yeast from his fermenter. I brewed an all DME 4% brew on it to build up the yeast cake, I kegged it after 3 weeks, it only...

I am giving up beer for 30 days

I guess the difference this time is you see this as abnormal for you, since you have been working towards a healthy lifestyle. I am taking for granted the thought that you may have done this more routinely in the past. This is definitely a win, now you can look at other ways to manage stress...

    Worst brewday in a while

"Next thing I know the pot of wort fell off the washer and landed half in / half out of the wash basin. 4 gallons of sticky wort dumped onto the floor before I could grab the pot and get it upright." Man dumping wort on the floor sucks! I have forgotten to close the valve on my brew kettle...

I am giving up beer for 30 days

Way to go Rhumbline and AG! Good luck to everyone else who is making a positive change to their drinking habits as well, yes the results are worth it. @ AG, I know the feeling on how much brew you have and how long it is lasting, I haven't brewed since Jan, am going to do 1 brew next week just...

I am giving up beer for 30 days

I had a few beers Fri/Sat and Sun as we had company over the weekend, I didn't drink to excess, only a mild buzz. By Monday I felt like crap, tired, no energy, I guess I notice it more now that I am exercising more and drinking less. I wasn't drinking a ton before I switched to weekend only...

Do you strain or dump your wort into fermentor?

I have a bazooka screen in the bottom of my kettle and I let the wort sit for an hour before transferring to my fermenter. This way, most of the sludge remains in the brew kettle.

I am giving up beer for 30 days

I am giving up beer for 30 days

Yeah 24 in a day would be a lot and what most would consider a binge, surprising they were able to find a volunteer who could drink that much in a day and then abstain for 6 days. I know someone who drank 24 beer or 40 oz of rye and smoked 4 packs of cigs every day for most of his adult life...

I am giving up beer for 30 days

I'm not here to say one method is better than the other but I have to say that no where that I am aware of in this thread does it indicate the anyone abstaining during the week is binging on the weekend. Am I having a few on Fri/Sat, yeeeepp, am I getting hammered, not in my opinion, have never...
